For National Banana Day I thought I would make some Secret Ingredient Vegan Banana Mega Muffins and share with you my secret recipe with the secret ingredient
These muffins are delicious and nutritious
I even packed some up and dropped some off to Kathleen while she was at work to honour the most versatile fruit of all.
Bananas are second to none in the fruit department
…except maybe avocados.
To make these muffins, do source the ensuing ingredients and follow the directions provided:
- 2 tablespoons of ground flax seed + 2 tablespoons of water
- 1 banana – mashed
- 1 zucchini – grated
- 1 carrot – grated
- 3/4 cup of applesauce
- 1/3 cup of coconut oil – liquid
- 1 tablespoon of vanilla
- 1 cup of spelt flour
- 1 teaspoon of baking soda
- pinch of salt
- 1/2 cup of pumpkin seeds
- 1/2 cup of hemp hearts
- 1/2 cup dark chocolate chips
- 1/2 cup of walnuts
- 1 tablespoon of cinnamon
- 1 teaspoon of nutmeg
- 1 secret
Pre heat oven to 350 degrees
Combine the ground flax seed and water in a small bowl and let sit until it becomes a gummy mixture.
Next, combine the remaining wet ingredients in one bowl with the flax mixture and combine all the dry together in another… except the secret. That comes in later.
When they are thoroughly stirred, independently, THEN combine them all in one big bowl.
Now the secret is idgaf, literally. I just throw things I have on hand in a bowl and then put them in the oven. I actually don’t even measure. So whatever, really. Use the secret wisely
You may need to add more applesauce if the mixture appears to be too dry or more spelt flour if the mixture appears too runny.
Distribute into a lined muffin pan and bake for 20 minutes.
