National Eggnog Day
I hate the shit that comes in the carton every Christmas season – vegan or na… bleck
This year I had a sort of a frozen chai version of eggnog
Combined coconut milk ice cream, rum, almond milk, vanilla and chai spice
Garnish with mint and a sprinkle of nutmeg and clove
For National Oatmeal Muffin Day, I whipped up a batch of ‘my’ muffins.
By ‘my’ muffins, I mean, I didn’t really follow a recipe, I just followed my heart
This batch involved flax seed, peanut butter, oats, salt, baking soda, OAT MEAL, chocolate chips, salt, maple syrup, slivered almonds … the usual vegan suspects
They turned out pretty good !
This oatmeal chocolate chip cookie was purchased at a kiosk at the Granville Island Market and the gulls didn’t manage to grab it away from me while trying to take a photo, so that’s a win for the good guys
It was lack lustre, but prompted me to reflect on all the other cookies I’ve had this year, in celebration.

National Rice Cake
The food I always forget about but honestly think is great
I generally go for the brown rice cakes, when I am eating them for real (like with hummus and avocado, or with PB & banana), but for this holiday, I went ‘crrrazzzzyy’ by getting some dill pickle flavoured rice cake chips
Pure salt and MSG no doubt
But I’ll be damned if they didn’t take a mean photo
Being National French Toast Day meant …
…French Toast !!!!!
100% vegan – 100% homemade! I used my super duper fancy domestic goddess vegan whole wheat flax bread then made a concoction based on what varying parties on the internet said to do
Nothing seemed ‘quite right’ so I had to go with my ‘gut’ :
- 1 banana
- 1 tablespoon of chia seeds
- 1 tablespoon of ground flax seed
- 1 teaspoon of vanilla
- 3/4 cup of almond/cashew/coconut milk
- 1 tablespoon of maple syrup
- dash cinnamon
- dash nutmeg
- Whole wheat bread
- berries & coconut for garnish
Combine the first 8 things into a pasty solution. Dip bread. Fry. When golden brown, remove and garnish
This was totally fine but very smooshy and gooshy. I would definitely put forth more effort next time finding a recipe that has had positive feed back and then not make up something I know nothing about, in the future
National Cashew Day
You don’t even know how much I love cashews. They are the best nut. Creamy and kind of soft and and they make great milk and delicious cheese alternative and I don’t know what I would do without them
The only drawback is the price point.
BUT if you think about how much effort goes into growing these fuckers, you’d realize they are a steal of a deal … takes THREE years to make one. Nuts!
Also, look how weird they are when they grow- they have their own ‘apples’
For National Cashew Day this year, I made some vegan Mac and cheese by soaking some cashews and blending them with nutritional yeast, salt, pepper, garlic, and lemon
No, it’s not a real macaroni noodle, it’s a rigatoni again
it’ not real cheese either
Yes. I made that bread. And it was easy.
It was National Home Made Bread Day and I got my bake on.
I found this recipe from the Minimalist Baker and went for it
- 1 1/2 cup warm water
- 3/4 Tbsp fast-acting yeast (~1 packet or 2 1/4 tsp)
- 2 Tbsp honey
- 1/2 tbsp salt
- 1 Tbsp flaxseed
- 2 cups whole wheat flour
- 1 3/4 cups all purpose flour + more for rolling / dusting
- 2 Tbsp rolled oats
- 2 additional Tbsp of honey
Combine warm water, yeast, honey, salt, flax seed and flours in a large mixing bowl and stir. Knead and turn it in the bowl with your hands. Add flour until the dough is no longer sticking to the sides – about 3 3/4 cups total.
Cover and let rise for 2 hours at room temperature, knead some more, then allow another 2 hours rising in the pan.
Slash the bread 2 or 3 times with a knife, making a cut about ½-inch deep. Mix remaining honey with some hot water and brush onto top. Sprinkle and press oats on top of that.
Preheat oven to 425 degrees toward the end of the dough resting time and place a metal or cast iron pan (not glass, Pyrex, or ceramic) on the lowest oven rack with water in it.
Place bread loaf in oven on middle rack.
Bake the bread for 26 to 35 minutes, or until deep golden brown and risen.
Remove the bread from the oven and let rest till cool
I was so pleased with myself, I made a few more loaves and gave them to friends. Nothing feels so I-could-survive-an-apocalypse-now as baking a loaf of bread from scratch…. besides maybe hot wiring a car… and syphoning gas… and maybe piecing together a transistor radio…

National Indian Pudding Day
My research proved that Indian Pudding typically involves dairy (grow-dy) and then vegan versions were all over the place.
So I totally went out on an offensive cultural appropriative limb and just made up my own based on what I saw going on
Using chia seeds, home made cashew milk, cinnamon, cardamom, and pistachios, I made my take on an Indian Pudding
Hope it’s not horrifying to everyone – the last thing I need is Indian Twitter calling me Becky ….
It was slimy and not really something I will do again, for the record
National Chicken Soup for the Soul Day
This a day to celebrate a book series compiled by two motivational speakers. They just took a bunch of other peoples stories and put ’em in between some gaudy covers and boom – net worth $60 Million.

I will be honouring real Chicken Soup for the Soul – chicken soup that doesn’t require the senseless murder of an innocent chicken.
I made lentil soup
You too, can make some Chicken Soup for the Soul! All you’ll need is:
- 1 onion
- 5 cloves of garlic
- 2 cups vegetable broth
- 1 can diced tomatoes
- 4 stalks of celery
- 2 carrots, diced
- 1 head of broccoli
- 1/3 cup of quinoa
- 3 leafs of kale, diced
- 1/2 cup of lentils
- fresh cracked pepper
- 1/2 tablespoon of cayenne
And there you have it, Chicken Soup for the Soul, instead of Chicken Soup for the Soul-less… which you’d have to be to eat a little chicken
Awww National Vanilla Cupcake brought me to a new little place in Vancouver that I’d never been to- Fairy Cakes.
It was the sweetest little bake shop with an assortment of different vegan things
There was a true home made flavour to this tiny fella. It was just the right amount of sweetness and cakiness
It’s always nice to ‘get out of the house’ and go to a new neighbourhood and this was ‘icing on the cake’ 😉
